Simon,
best not to go overboard with those taps and dies.
The threads on the tie rods were rolled, not cut and any reduction in the major diameter of the thread might cause a problem, especially with uprated springs...

i know you can get un fluted taps ( slightly triangular in shape , they push softer metals into the thread form rather than cutting) but can you get un fluted dies?

I chopped up an old tie rod end to clean my threads up.
I cut the loop off the end and cut a slit along the length with one of those skinny cutting discs.
I intended to weld a big nut in the middle of it but didn't need to in the end.

Worked for me.

I've ''cleaned'' tie rod end threads for years using a ''standard'' 11 x 1 mm die. Never seen one fail. Even totally over loaded 2cvs driving on 10 million corrugations in the out back and still not coming apart. The rod will snap yes but the thread is pretty strong, despite only a centimeter or so, is holding on to the end eye.

yep i too have re threaded many tie rods with no probs for off road
Broken eye holes are quite common!
