Having just spent the last 5mins thinking about it, a car (even a 2cv)without doors, is still a damn sight safer than a motorbike, so I can't really see there being a problem. Edit Right, where's that 11mm spanner?

There's nothing directly in UK Law to stop you driving around without doors. But to your insurer it's a modification and it's one that they're unlikely to be persuaded to continue cover for. Policy terms and conditions will state that your cover is only for a standard unmodified car or for one which has approved modifications, so the moment that you drive without the doors you're driving uninsured.
Most plods are lazy or incompetent in my experience, but my brother is one of the more diligent ones and would certainly pull you over and check with your insurer if he caught you driving within the Thames Valley policing area. He is a bit of a sod when in uniform and a hypocrite out of it as he regularly ignores laws which don't suit him.

I wonder if that applies to my cutaway wings too? Or the fact that there's no steering lock? Or my flick-switch-and-push-button ignition? Or the lack of a front bumper? Or ... oh, there's too many to list. I might as well be hung for a sheep as a lamb.

Some of them the insurer wouldn't give a fig about. But the extra items you list are all so minor that even a zealous plod like my brother wouldn't pull you for them. Many wouldn't even be commented on if the insurer's engineer inspected your vehicle as a result of a claim, but things like the cutaway wings might attract the latter's scrutiny as they may suggest non-standard and riskier vehicle usage. The steering lock would only be an issue if the car had been stolen, but the insurer would have difficulty in proving that it was non-functional prior to the theft.

thats why i love this hot weather, i ran the ripple without all doors, roof and bootlid a few times when i had it, i ran it without front wings too at te 2cvgbInternational at Worcester back in 1999 around the campsite and beyond. the looks were priceless as usual. no seatbelts made the passengers brick it a bit though, and as you all know, 2cvs dont really have grab handles in the front, uness you use the seat base or the dash

Ah yes, the infamous sweeping statement. Yes Paul. The operative phrase being "in my experience". Based upon my direct experiences of working closely with them for over fourteen years, being closely related to two of them, and the generally woeful response I get whenever I need them. I was moderate in my original statement: it should have said, "Most plods are bigoted and hypocritical and lazy or incompetent in my experience". Although it may be argued that these qualities represent the population that they're drawn from it doesn't explain why the majority of the so-called "plastic plods" (PCSO's) I've had dealings with have been generally the exact opposite.
